Make Darby Stanchfield’s Quick and Easy Halibut Recipe | Halibut with Mushrooms & Lemon Butter Sauce


hi guys I’m Darby Stanchfield and
welcome to my kitchen today I’m making an Alaskan halibut with a lemon thyme
Pepita sauce it’s an old family recipe I grew up in Alaska my dad was a
commercial fisherman it seems super foodie but it’s really
simple and it takes like 12 minutes so for the recipe
you will need 1 pound of halibut one can of artichokes 1 tablespoon of capers 1
cup of sprouted brown basmati rice but you look up and for the sauce you need
1/2 a cup of raw pumpkin seeds 1/4 TSP of garlic powder and onion powder the
juice from one whole lemon 1 teaspoon of Dijon mustard and a tablespoon of lemon
thyme I use about 1/2 a teaspoon of salt and 4 tablespoons of extra virgin olive
oil ok so I’m using an Alaskan halibut see this here it says sport caught not
for sale Lagasse spark got it I did so my family
we went to Kodiak Alaska last summer and we crossed 700 pounds of fish in two
days and this is some of it I’m the best fisherman of the family let me tell you
so this fillet of how it is played on the thinner side and it takes about 10
to 12 minutes to cook my rule of thumb is about 10 minutes per inch foot fish
and while the oven is heating up we can make the sauce so now we’re making the
lemon thyme capito sauce this is half a cup of pitas or pumpkin seeds juice from
a whole lemon olive oil onion powder garlic powder lemon thyme salt Dijon
mustard I take the cuisine er quick it’s gonna be loud just go so my neighbors
think I have a new sports bar okay so here’s my sauce and I’m going to
cut each piece of fish so this lemon time the pita sauce is a fabulous sauce
because you can put it on any white fish that you make in your home the cod
pollock it’ll work then I use a can of artichokes they
should be drained they should be quartered and I’ll just
sprinkle the artichokes and I’m gonna add a tablespoon of capers
so the Alaskan halibut with the lemon thyme Pepita sauce is ready to make and
I am serving the halibut with sprouted brown basmati rice which I have cooking
right now why don’t we take a tour of my freezer I told you that I went sports
fishing this summer so I have four different kinds of fish in my freezer we
have Q salmon Alaskan cod black rockfish Pacific cod and I also have white king
salmon and bread king salmon I feel super grateful that I own a
chance to go catch them last summer spend solve this let’s get all the

rice take about a big scoop like that let’s see he’s a hell of it just like
that had a couple artichokes so there you are
the tart artichokes and the halibut that’s been baked with the lemon thyme
the pita sauce all on top of a nutty basmati rice here we go it’s so cozy I’m
