Namaskar. Welcome to nishamadhulika.com. Today we will make Gajar ka Halwa, which can be made very quickly and easily. It is really mouth drooling. You will also see how to keep Gajar halwa for a longer duration. Let’s start making Gajar ka Halwa. To make Gajar Halwa , firstly let’s cook the carrot. Add 4 tbsp ghee to the wok, let it melt. Take 1.5 kg grated carrot. It was peeled, washed, with stalk removed, and then grated. This is red carrot, it is available in abundance during winters. Pour the grated carrot in ghee. Roast on medium flame, for 2 minutes, while mixing in ghee. Cover and cook the carrot on low medium flame for 5 minutes. Till the carrot is cooked, Cut the dry fruits. Take 15 to 20 cashews, cut them into 5 to 6 pieces. Cut some into 2 pieces. Take 15 to 20 Almonds, cut into 4 to 5 longer slices. Take 6 small cardamoms, peel grind and make fine powder. Firstly let’speel them. Its becomes more convenient to peel if these are grinded once. 5 minutes have passed, stir the carrots. You can see the juice coming out of the carrot. Cover and cook it again on medium flame for 5 to 6 minutes. Carrot is cooked for 15 minutes, stirred at regular intervals. Carrots are cooked. Such carrot is needed for halwa. If the carrot turns out to be too soft, then the halwa doesnt taste that good. Add 300 gms sugar to it. You can adjust the quantity of sugar as desired. Cover and cook it for 3 to 4 minutes, keep flame medium. Check the halwa, We had covered and cooked it for 4 minutes, you can see the juice oozing from it. Sugar has dissolved. Now cook the carrot open, till the juice reduces. Increase the flame. Till the carrot is cooked, let’s roast the mawa. Take 250 gms mawa, crumble and add it to the pan. Stir and cook it on low medium flame till it changes color and is aromatic. Stir the carrot at regular intervals, keep a check on these. Mawa has slightly changed in color. Ghee is separating from it and it is fragrant too. Mawa is roasted and ready, it took 5 minutes to roast it. Turn off flame, roast mawa for a while. Carrot is cooked and ready, its juice has reduced. Now you can preserve these. Take any container which can be closed easily. It should be big enough, to store carrot for halwa once. Keep the carrot sugar cooked mix, let it cool, then keep in freezer. Take out from freezer, cook halwa when desired. Right now cook the halwa from the mix. We had previously taken 1.5 kg carrot, kept 1 container aside i.e take out 1/2 kg carrot mix. Use the mix later. Here we are making halwa from 1 kg carrot. Add 1 cup milk. Using milk is optional. You can also make using mawa, but this gives a different taste to the halwa. Cook until it is dense. Keep flame high. Stir at regular intervals. Halwa is cooked on high from 5 minutes. It seems dense, add mawa to it. We had roasted the mawa, you can also take it unroasted. Roasted mawa tastes excellent, Add dry fruits to it. Save a little dry fruits, add cardamom powder. Mix all ingredients, cook for 2 minutes. The color and texture of halwa is amazing, it is fragrant. Take out the halwa in a platter. Tasty Gajar halwa is ready. It can be cooked quickly and easily. Garnish halwa with dry fruits. Gajar halwa is ready to be relished. There is nothing much fussy about it. Just make sure, nothing burns. You will make excellent Gajar halwa. You can keep and eat this halwa for 1 week. Close the lid of gajar mix kept aside, keep it in a freezer and use it for 6 month. Whenever you are craving for carrot halwa, then take out the halwa from the freezer. Keep iton table. When it comes to room temprature. then take mawa,roast it, and add preserved carrot to it.
